Sarajevski ćevap - a synonym for the city's rich culinary culture
The Sarajevo ćevap, a culinary treasure deeply rooted in the rich tradition of Sarajevo, has officially been granted the status of a product with Protected Geographical Indication (PGI).
This designation, awarded by the Food Safety Agency of Bosnia and Herzegovina, represents the highest standard of quality, emphasizing the authenticity of the product and its reputation both domestically and internationally.
Ćevapi are a beloved Sarajevo classic, equally appealing to local residents and tourists who enjoy them at their favorite eateries in the always lively Baščaršija. Many return year after year, drawn by the unique flavor that has become synonymous with the city’s rich culinary culture.
To further promote and protect this renowned dish, the Sarajevo Ćevapi Association initiated the process of safeguarding ćevap as an authentic product of the Sarajevo region. At a central ceremony held at the City Hall, Džemil Hajrić, Director of the Food Safety Agency of BiH, officially presented the decision to Mustafa Ogrešević, Vice President of the Sarajevo Ćevapi Association, declaring Sarajevo ćevap a product with Protected Geographical Indication.
“Protecting Sarajevo ćevap as a product with geographical origin is the culmination of years of dedication and skill of generations of Sarajevo ćevapi makers,” said Ogrešević. “This recognition confirms the authenticity of our product and obliges us to maintain the highest standards of quality and tradition. Sarajevo ćevap is not only a symbol of our city but also a brand that we can proudly present around the world.”
Tasting Sarajevo Ćevapi in Baščaršija
On this occasion, the Association, in collaboration with the City of Sarajevo, organized a free tasting at the square in front of the Baščaršija Mosque. Hundreds of citizens and tourists lined up to enjoy portions prepared by famous Sarajevo ćevapi eateries such as Željo, Željo 2, Petica, Specijal, Zmaj Stanica, Galatasaray, Hodžić, Mrkva, and Nune.

I would recommend everyone coming to Sarajevo to try these. The texture is so good, I love it! The Importance of the Protected Geographical Indication (PGI)
Over the past four years, USAID Developing Sustainable Tourism in Bosnia and Herzegovina (Turizam) has closely collaborated with the Food Safety Agency of BiH to increase the number of products protected by geographical indications. This initiative aims to expand Bosnia and Herzegovina’s tourism offerings and attract higher-spending tourists seeking authentic culinary experiences and a deeper connection with local cultural heritage.
Courtney Chubb, Director of the USAID Mission in BiH, said: “USAID Turizam is helping producers across Bosnia and Herzegovina protect their products as cultural heritage and safe food products. Our goal is the sustainable development of the tourism industry in a way that celebrates and preserves the rich culture, tradition, and cuisine of this country. This designation protects Sarajevo ćevap as a unique product that cannot be found anywhere else, which always attracts food lovers and tourists from around the world in search of an authentic experience. Members of the Sarajevo Ćevapi Association can now promote their product as ‘the real thing’ and reap the benefits of increased sales and revenue with the growing demand for their authentic product.”
The PGI is a prestigious designation that highlights the strong connection between a specific geographical area and the unique ingredients, production methods, recipes, and other characteristics of a product that cannot be replicated anywhere else in the world. For consumers, it guarantees safety and quality, while offering producers benefits such as added market value, increased tourism revenue, and better opportunities for export to regional and broader markets.
By attracting more tourists seeking quality, authentic experiences and opening opportunities for local producers to promote their product to new consumers, we contribute to the overall development of Bosnia and Herzegovina’s economy and enrich its tourism offerings.
